Fallout 2 is supposed to be coming soon, but as the environment in gog's current games seems to be a DOS one (shown by some Dos4GW statements at the start), and F2 was Win Only (IIRC), I'm not sure how far this is off. Fallout 1 via gog.com is now OSX Capable - it seems to work quite well inside the emulated enviornment gog have created for it.

Crossover uses WINE, at any rate, and WINE is pretty good with older games. It goes up and down in so far as to how much has downloaded and just keeps doing that.

In fact, they seemed to run a bit more smoothly than the PC versions. Before I updated to 10.6 without realizing that the original Fallouts wouldn't run, I can tell you that I played my copies of the Mac port of both Fallout 1 and Fallout 2 extensively, and they worked flawlessly.
If you did that, the original Fallouts would run fine. There is another option though, and that would involve formatting your hard drive and then installing OS 10.5 on your Mac instead of 10.6. Other than that, you can wade it out until Apple or somewhat at Omnigroup (who ported the games) updates the original Fallouts to run on OS 10.6, or until they're ported to the iPhone or something (which I think would be awesome and would completely work and could be done) However, that's your only option right now (other than installing Windows XP or Vista onto your Mac through Boot Camp or a virtual PC program), but you still need the Windows versions of the games for either. However, there is a program called Crossover that, if you buy the Windows versions, you could install them on your Mac and buy Crossover, which would allow you to play them.
